STYLES OF ROASTS

Harvest Café Coffee Company has a variety of roasted beans. If you find yourself wondering what the difference between "City Roast" and "Espresso" beans is, it's all in the roast.

Light/Cinnamon Roast - These beans have been roasted very little. This roast produces an acidic, highly caffeinated coffee. It will be quite bitter. Contrary to the name, it does not contain cinnamon -- but the color is similar. You may not find this anywhere other than in North America. This roast would be special order.

City Roast - The beans are chestnut brown with a noted richness from the oils, which are close to the surface. The coffee has a nice balance between acidity and body, affecting a mellow, well-rounded tasting cup. Harvest Café Coffee Company roasts a high percent of its products to this specification. This roast looks great and lends itself to a very consistent, well-balanced cup.

Color: Medium Brown
Acidity: Natural acidic qualities of the origin come through
Body: Nicely developed
Surface: Generally dry or very little oil on bean surface.

Full City - The beans are darker with a light shine and possibly a few tiny drops of oil on the bean surface. Darker roasts have less caffeine, and are less bitter and have more body. You'll notice that they're often sweeter.

Color: Rich full brown
Acidity: Slightly diminished from medium roast.
Body: Heavier, more pronounced.
Surface: Oil droplets may appear depending upon origin and hardness of bean.

Vienna Roast  - The coffee is fully developed. Full oil is present on the bean The natural sugars of the coffee are not carbonized yet. The color is dark brown, with full oil but is not black.

Color: Very dark brown
Acidity: Slightly diminished.
Surface: Covered with oil.

French Roast - The beans are a deep brown, larger, and unarguably shiny from surface oils. This roast is particularly rich tasting, sweet, and toasty. Sometimes, a cream flavor can be detected as a forward note. West of the Mississippi and throughout much of the old world, I keep hearing that French roast is "the only way to drink coffee."

Color: Very dark brown to blackish in color
Acidity: Mostly muted.
Surface: Oily with a high sheen

Espresso / Italian / Very Dark Roast -The beans are black, larger, and glossy from much oil. So much of the character of the bean has migrated to the outside of the bean, that an open bag can be smelled from great distances. Some European coffee shops only offer this roast because they don't make drip coffee.

Color: Blackish
Acidity: Fully muted.
Surface: Covered in oil
